The 71-year-old former Tottenham, West Ham and Birmingham boss beat Inbetweeners actress Emily Atack to win the ITV show.
Redknapp had a lump in his throat as he spoke about wife Sandra in emotional scenes in front of hosts Dec and Holly Willoughby.
The ex-football manager had to wipe away a tear at one point - at which point Holly began to cry too.
Revealing what exactly set her off on ITV2 show 'I'm A Celebrity... Extra Camp', she said: "It was difficult. He suddenly spoke so beautifully about everybody and the whole experience.
"He's not a man to get emotional but when you see him going it sets you off. It's lovely, I love a man who wears his heart on his sleeve.
"Harry, he melts my heart that man. I literally haven't stopped crying. He's amazing.
"There were so many standout moments. All the trials he just faced head on but when Sandra went in there, that had to be the moment.
"You'd have to have a heart of stone not to be affected by that. He just couldn't stop touching her, it was so sweet."
While Harry launched into a passionate tribute to his camp-mates after being handed the crown.
"I'm amazed, I'm amazed I survived three weeks," he said.

"When I first came in I looked at the group and thought 'I'm in trouble here'. I looked at the group and thought 'none of them are interested in anything I'm interested in, no sport'.
"Only Nick knew a little bit about football. I thought it'd be a hard couple of weeks but they dragged me through it, every one of them.
"They are the most lovely people I've ever met, the whole group. There wasn't one person I could ever say one single bad word about it.
"They were amazing. Without them, I wouldn't have survived.
"They pulled me up hills, dragged me through water. When I've been flagging they've been pushing me and saying 'come on Harry, you can do it'."

Emily Atack, who came home second in front of John Barrowman, lauded the football hero.
"He's such a winner, of course he's won," she beamed.
"It's Harry Redknapp. To be alongside him in the final, I'm honoured."
While Dec added: "He played a blinder all the way through, his stories and his jokes in camp.
"The way he hated the food and the way he adored Sandra was apparent for everyone to see. It was really heartwarming."
